3 cups self-rising flour
1 cup butter
200g yogurt 2%
4 large eggs
14 tsp soda
pepper, finely chopped
1/2 cup grated kefalograviera(type of hard yellow cheese)
1/2 cup feta cheese
1/2 cup olives, chopped
1 tsp oregano
1 tsp Salt
1. Put the butter, yoghurt, eggs, flour and soda in the mixer bowl. Stir at medium speed until the dough is homogenized.
2. Add the kefalograviera, the feta cheese, the olives, the chopped peppers, salt and pepper and oregano.
3. Stop the mixer and mix with a spoon, to homogenize the dough very well , add water if the dough is too tight ( it should be like a cake dough). Divide the dough into muffin tins.
4. It makes 18 to 20 cupcakes. Bake at 180120⁰C for 30-35 minutes.
