Salmon and grilled vegetables with balsamic sauce in the oven

Ingredients
For salmon:
3 salmon fillets
1 lemon its juice
A little olive oil
Oregano
For vegetables
1 garlic clove, cut in half
2 zucchini, sliced
1 medium eggplant, sliced
1 red sweet pepper, sliced
1 green sweet pepper, sliced
2 sliced carrots
1/2 pound baby potatoes sliced
1 onion, finely chopped
2 bay leaves
1 tsp cumin
2 teaspoons thyme
4 tablespoons olive oil
Salt
pepper

For the balsamic sauce:
1/4 cup balsamic vinegar
3 tablespoons honey

Instructions
1. Preheat your oven to 180°C.
2. Start with vegetables. Rub a large baking dish with the garlic. Line up inside in the pan the eggplant, zucchini, carrots, potatoes and onion. Add the bay leaf, cumin, thyme, salt, pepper and olive oil and mix well. Bake for 30 minutes, then add the peppers, mix well and continue baking for another 15 minutes.
3. We proceed with the sauce. Mix well balsamic with honey and pour over this vegetables. Stir and continue baking for 15 minutes.
4. Continue with the salmon. Put greaseproof paper in a small baking dish. Then add them salmon fillets, drizzle with olive oil and add the lemon juice. Then add the oregano. Put the salmon in the oven until golden brown.
5. The baking time depends on the size of the fillets and the cooker.
